Crepes with fairtrade chocolate sauce

A simple and popular classic French recipe.

Ingredients for 20 crepes

  • 300gr of flour
  • 3 eggs (medium)
  • 2 table spoons of oil (sunflower)
  • 1/2 litre of milk
  • pinch of salt
  • 1 teaspoon of orange flower water (optional)

Ingredients for the chocolate sauce

  • 100gr of Fairtrade dark chocolate
  • 1/4 litre of milk

preparation method (crepes and sauce)

  1. Mix the flour, salt, oil, eggs and orange flower water in a large mixing bowl,
  2. Before the mix becomes too hard, add the milk little by little to avoid lumps,
  3. Leave the dough to rest for at least 30 minutes,
  4. Check the consistency of the dough, if it is too thick, the crepes will be thick. Add water to thin the dough to your consistency,
  5. Heat up the frying pan (high heat) and smear sunflower oil all over the pan (very thinly, using kitchen towel),
  6. Pour a medium ladleful of dough in the pan in one hand and rotate the pan slowly to spread the dough all over the bottom of the pan,
  7. Reduce the heat to medium and cook for 2-3 minutes,
  8. Once the sides of the crepe begin to lift, and the top has dried, run a wooden spatula round the crepe so it comes unstuck,
  9. Flip the crepe (if you are adventurous) with a swift movement of the pan, or, with the spatula to play it safe,
  10. Cook the other side 2-3 minutes as well, checking the underside regularly until it acquires light brown spots (like a giraffe),
  11. Once the crepe is ready, put it on a plate and sprinkle lightly with Fairtrade sugar,
  12. Repeat steps 5 to 11, except that the pan should now stay on medium heat.
  13. Once you have cooked all your crepes, break the Fairtrade chocolate into small pieces into a small warm breakfast bowl,
  14. Bring 1/4 litre of milk to a simmer in a milk saucepan,
  15. Pour a little bit of the hot milk into the chocolate and start stirring with a fork to start melting the chocolate. Keep adding the milk in small amounts, leaving it on the hob to keep it piping hot. Once all the chocolate has melted, adjust the consistency by adding more hot milk if you want the sauce to be thinner,
  16. Plate up and enjoy with a glass of sweet cider and a good selection of friends.
